Yummy Vegetarian Chili

Quick & Easy Vegetarian Chili | Feel Great in 8

I don't know about you lot, but for me there is something very satisfying about making a meatless meal that my whole family {read carnivorous husband}loves.

This super like shooting fish in a barrel to throw together chili is one of those meals that is even requested past my {steak loving} husband. 🙂

Yummy Vegetarian Chili

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • iii cloves garlic, minced
  • i carrot, chopped
  • 1 celery stalk, chopped
  • two bell peppers (whatever color), chopped
  • ii (15oz) cans petite diced tomatoes
  • 2 (15oz) cans red kidney beans, rinsed and drained
  • two (15oz) cans black beans, rinsed and drained
  • 4 cups water
  • 2 teaspoons cumin
  • ane½ tablespoons chili powder
  • Salt and pepper, to taste
  1. Heat olive oil in a large pot, over medium heat. Add onions and melt until tender, almost v minutes.
  2. Add together garlic and melt for 2-3 more minutes.
  3. Add carrot, celery, and peppers. Cook for five-10 more minutes, or until vegetables are soft.
  4. Stir in diced tomatoes, beans and water. Flavour with cumin, chili powder, common salt and pepper. Stir and permit chili simmer for thirty minutes. Stir oft, so it doesn't stick to the lesser.
  5. Leftovers freeze well.
